I’ve always been skeptical of kale – spinach and lettuce seemed like simpler alternatives, and besides, “who really eats kale anyways,” I thought? But, seeing all the health benefits that kale offered, I decided to give it a try and wouldn’t you know…it wasn’t that bad! In fact, it was pretty darn good so I began to experiment and I stumbled upon the easiest, healthiest, and most delicious snack of all time – kale chips. I tried a lot of different variations before landing on this recipe – give it a try and be sure to let us know what you think.

2 bunches of fresh kale
*1-2 cloves minced garlic
* Seasoning and herbs, to taste
Sea salt, to taste
3 teaspoons olive oil
1/4 cup fresh grated Parmesan cheese (fresh is definitely better than the shaker kind, we promise!)

* The seasonings and garlic can be substituted for basil, oregano, parsley, or any kind of seasoning that you prefer (I prefer Italian.) But, be sure to use fresh whenever possible, you’ll definitely notice a difference in the taste!

– Remove stems from kale
– Chop into bite sized pieces
– Wash and dry well
– Place the kale in a large bowl and toss with olive oil, sea salt, and garlic
– Lay the kale flat on a large baking sheet, leaving space in between each piece
– Bake at 375 degrees for 8 minutes
– Flip the pieces over and cook 8 more minutes, or until the edges are crisp and light brown
– Remove from the oven and sprinkle with parmesan cheese
– Serve immediately or store in an airtight container

Grapefruit with Honey & Bananas

Grapefruit with Honey & Bananas

This simple snack packs a lot of punch and its a fun take on a tropical fruit salad. Studies show that grapefruit is one of the best foods for weight loss because of the effect it has on the fat-storage hormone insulin. In addition, grapefruit is actually pretty filling because its about 90% water, giving it the highest water concentration of any fruit. All that juice will fill you up rather quickly and prevent you from overeating.

– Grapefruit cut in cubes
– Banana slices
– Honey, drizzled

Mix together and enjoy!

Granola is the perfect snack or breakfast food, and this one is packed with protein. In general, granola has wonderful health benefits including the ability to lower cholesterol, improve heart heath, regulate digestion, increase energy, and lower blood pressure.

2 cups old fashioned oats
1/4 cup peanut butter
1/4 cup honey
2 tablespoons of light brown sugar

Optional ingredients
dark chocolate chips
dried cherries or cranberries


– Preheat oven to 325
– Combine all ingredients except the oats and heat either over stovetop or in the microwave until just melted and smooth
– Pour oats into the bowl and mix together
– Spread the mixture on parchment paper and bake until the granola is golden, approximately 19 minutes, stirring occasionally
– Once the granola is done baking let it cool and it will harden
– Store in an air tight container
